This a great weeknight recipe for the meat eaters in your house. We like to make it with extra lime and some people like to add extra fish sauce or soy sauce at the table. A rice cooker is an easy way to make rice, especially if you have lots of other things to attend to, like helping with homework and tripping over the dog. I recently bought frozen brown rice (Whole Foods, Trader Joe’s) to have on hand when I didn’t have time to make it and it was a great shortcut! For a complete meal, add in cooked green beans, broccoli or frozen peas.
